Race day recap

The night before I pick up my packet for the race.
I crack up (because I'm still inmature) that this is my race number...



So the race was to empower girls...sounds like a good cause.
What I didn't know is that I would be running with 7 year old children that would
stop to tie their shoes and still end up in front of me...I crack up more.
It wasn't that empowering for an old girl!

I ran it in about 10 minute miles...whatever. Race crit: I came out too fast and burned out too soon.
And note to self: atleast drive the race route before you run another.
There was this huge hill at the very end of the race! Didn't plan on that one!
All in all it was really fun!


While I was huffing and puffing on the run, these two sweet boys were getting all the free stuff (that I'm pretty sure was for the runners) ...I crack up.
No joke they had a ton of food-mostly from Kashi
Thanks to Kashi Key-Key and Bo will now be able to live a few weeks on healthy snacks.

It is turkey day and this mostly vegan ate some meat. Now I'm off to run if off. Good times!

Gonna run a 5K

I'm going to run a 5K this weekend...I think. This on top of hosting a dinner party, attending a child's birthday party, spending time with my mom, sending off my Mother-in-law to CA, and getting lil J down for a nap hopefully two...Like I said, I think I'll run a 5K this weekend.

Just so you know one of my besties, Jessica, made me feel so good the other day...
She says to me, "You look so skinny." Well that's all I can remember that she said...

Wish me luck! Back to my 2.5 mile truck tomorrow! I may try to a little longer...

5 during lunch

I ran 5 miles during my lunch hour! I did it in about 10 minutes miles. Pretty good, since I climbed those nasty hills on campus- Maple St., Statium Dr., and even Duncan near the new parking deck. Yep, I feel like a badass!

I miss my runs

I am sick. I haven't ran. I did get in 11.5 miles last week. I'll try for half this week.
I'm down another 4 pounds! Yippee.

Fuel

We eat mostly veggies, rarely meat, some whole wheat breads, and that is about it. We became vegetarians before our son was born. Once he was born, we quickly found out he couldn't have dairy products (not even a pat of butter in our veggies). At the same time Jason began reading The China Study.  A great read about how much healthier you can be with a vegan diet based on some really good research.  

We quickly became the vegan eating Jones family. I would like to tell you it wasn't hard, but it was. I was a nursing mother. We worked out a lot at the time. And damn I was hungry. People would ask, "What do you eat?" We ate a lot, it was a lot of good food.

We have added a little bit of cheese in our diet. Jaysop enjoys pizza with a little cheese. He seems to have grown out of his severe intolerance. But pretty much we like our diet now. Food taste better!

Here are some meals I have prepared for our workout fuel:

This summer we made a lot of pesto.
I swear it is just as good without cheese. I like to add a little green onion.


I think I might have posted this before.
We make tacos with onion, cilantro, beans, and guacamole.


Lil' J is eating quinoa, with lima beans, okra, and corn.
He doesn't even know about mac and cheese.


This potato leek soup (made with soy milk) with cabbage, green beans and corn.



A pear, pecan, capers, and a little blue cheese tart.
I got fancy one night.

Pretty much we try to eat simple food with lots of veggies, nuts, and fruit. I enjoy cooking. I like to challenge myself by using just want is on hand...and rarely with a recipe or plan.

And that is our diet.
